The oil is cold pressed within hours of harvesting, in limited quantities, to preserve its delicate aroma, low acidity, and exceptional organoleptic balance.
Gandolfi extra virgin olive oil’s low degree of acidity (less than 0.5%) and the high presence of polyphenols make it a unique, top quality, and prestigious product. Thanks to its particularly delicate sensory properties and its sweet and fruity taste, it enhances the peculiarities of the most refined dishes, without ever covering their aromas or flavours.

Due to the complexity of its production and the uncompromising selection of raw materials, Gandolfi is released only in strictly limited editions. Each bottle is individually crafted, filled, and packaged by hand, making every piece unique. Due to the extremely complex and long lasting manufacturing process, which enhances quality at the expense of quantity, the production of oil varies every year.

Each bottle is 0,75 litres, handmade in fine Italian crystal and delicately embellished with real gold detailing. The coffer, exquisitely crafted from briar wood, is distinguished by a grain that echoes and celebrates the noble essence of the olive tree.
