This work requires time, sacrifice and above all passion, as it always had been in the past.

Harvesting, as well as the careful selection of each individual olive, is an extremely delicate step to best preserve the integrity of the olives and ensure a perfect degree of ripeness.

Only the best olives, individually selected by hand, are pressed within a few hours, in order to preserve their fragrant taste and organoleptic properties.

Gandolfi oil only goes through a cold-pressing process, which results in a lower amount of oil, but guarantees much higher quality.

As evidence of the undeniable bond with its history and its land, Gandolfi safeguards traditions, which are the beating heart of Italy, a country that is focusing its energies to overcome the challenges of the modern era. The gold, after being melted, is transformed into ingots and then laminated into strips. The master proceeds with various beating cycles, the same ones in use in the eighteenth century. The goldbeater is the precious keeper of an ancient art, which involves the transformation of gold bars into very thin leaves of 24 Carat pure gold entirely by hand. It is a long and tiring process that requires more than five hours of hard work and centuries-old skills learnt to perfection.
